ELLIS PARK KENTUCKY HAM

PART I:
1 Aged Kentucky Ham
small handful whole cloves
large bayleaf
2 cups vinegar
1 lb. brown sugar
1 lb. dry onions

PART II:
1 cup light brown sugar
2 teaspoons ground cinnamon
2 tablespoons prepared mustard

Directions:

Cover ham with cold water and soak two days, changing water every six or eight hours. Cover ham with fresh cold water to which onions, vinegar, spices, sugar have been added and bring to boiling point. Simmer 25 minutes to the pound. Set kettle aside and allow ham to cool. Remove skin and trim away some fat leaving just enough to score in diamond shape.

Mix ingredients of PART II—sugar, cinnamon, mustard—and spread over ham, and put a clove in the center of each diamond shape.

Bake at 400° until well browned. As the ham is already cooked a half hour or so is enough. Slice thin and serve with Plum Jelly Ham Sauce.
